Chicken Francaise




  • 1 egg, beaten
  • 1/2 lemon, juiced
  • 1 cup all-purpose flour
  • 1 pinch garlic powder
  • 1 pinch paprika
  • 6 skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 1 (14.5 ounce) can chicken broth
  • 1 lemon, juiced
  • 6 slices lemon, for garnish
  • 2 sprigs fresh parsley, for garnish

Directions

  1. In a shallow dish or bowl, mix together the egg and juice of 1/2 lemon. In another shallow dish or bowl mix together the flour, garlic powder and paprika. Dip chicken breasts in egg mixture, then flour mixture.
  2. Heat butter or margarine in a large skillet over medium heat. Add chicken breasts and cook until golden on each side.
  3. In a medium bowl, mix together broth and juice of 1 lemon, and pour mixture over chicken in skillet. Reduce heat to medium low and let simmer for about 8 minutes. Place on serving platter, and garnish with fresh lemon slices and parsley sprigs.

Banana Bread French Toast


Ingredients

  • 3 eggs
  • 3 tablespoons sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 1 loaf banana bread
  • confectioners' sugar for dusting (optional)

Directions

  1. In a shallow bowl, whisk together the eggs, sweetened condensed milk and vanilla with a fork. Set aside.
  2. Melt butter in a large skillet over medium heat. Slice banana bread into 4 thick slices. Dip each slice into the egg mixture, then place in the hot pan. Cook on each side until golden brown. Dust with confectioners' sugar just before serving, if desired.

Rich and Creamy Tomato Basil Soup


Ingredients

  • 4 tomatoes - peeled, seeded and diced
  • 4 cups tomato juice
  • 14 leaves fresh basil
  • 1 cup heavy whipping cream
  • 1/2 cup butter
  • salt and pepper to taste

Directions

  1. Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture along with the basil leaves, and return the puree to the stock pot.
  2. Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.





Baja Chicken Dinner

Ingredients
  • 1 tablespoon canola oil
  • 1 pound boneless skinless chicken breast, cut into 2-inch strips
  • 2 jalapeno peppers, seeded and minced
  • 1 can (15 oz.) low-sodium tomato sauce
  • 1 package (16 oz.) frozen corn
  • 1/2 teaspoons taco or burrito seasoning
  • Baked low-fat tortilla chips
  • Low-fat cheddar cheese, shredded
Instructions
1. Heat oil in skillet over medium heat. Add chicken and cook about five minutes, stirring often.

2. Add peppers, tomato sauce, corn and seasoning. Simmer for 15 minutes, stirring occasionally.

3. Spoon over tortilla chips and sprinkle with cheese.
